1909 • Chemistry, especially oil and fat chemistry, was in its infancy in the first part of the century. The AOCS is formed (originally named the Society of Cotton Products Analysts) in May 1909.

1910-1919 • Nine years after this revolutionary society was formed, its first book, Official Methods and Recommended Practices of the AOCS, is published in 1918.
1910-1918: Getting Started (.pdf)
1921 • “There were so few trained chemists among the probable membership that it was decided to adopt the name of Cotton Products Analysts. As the industry grew, it came to depend on chemistry more and more. Many of the leading chemists of the country joined the Society and its name changed in 1921 to the American Oil Chemists’ Society.” David Wesson at the mid-year meeting of the society, October 28, 1927.
1920-1929 • By 1924, the Journal of the Oil and Fat Industries, which later became the Oil and Fat Industries in 1927, and then Oil and Soap in 1932 is first published. These were the precursors to the 1947 change to the Journal of the American Oil Chemists’ Society (JAOCS ). The Soap Chemistry Section of the American Oil Chemists’ Society is formed four years later in 1928.
1919-1928: A New Decade, a New Name (.pdf)
1930-1939 • “Cottonseed Oil Leads in the Margarine Production. This is the first time on record that cottonseed oil has taken first place in the margarine production and is the first time since 1919 that coconut oil has not held the lead. The year’s consumption of cottonseed oil by the margarine industry totaled 137 million pounds, or 43 percent of all oils used…” From Oil & Soap magazine, October 1937.
1940-1949 • A.J.P. Martin and R.L.M. Synge pioneer partition chromatography in 1941 and go on to win the Nobel Prize in Chemistry in 1952. By 1945, AOCS could boast 1,000 members.
1939-1948: Rebound (.pdf)
1950-1959 • In what is now a classic experiment, 9% linolenic acid was interesterified into the glyceride structure of a “non-reverting,” nonlinolenic acid oil-namely, cottonseed oil. The taste panel identified cottonseed oil interesterified with linolenic acid as a form of soybean oil.
1960-1969 • In an effort to bridge the gap in academic publishing, AOCS launches its first issue of Lipids in January 1966.
1959-1968: Everything is Changing (.pdf)
1970-1979 • In 1972, the first AOCS monograph is published: Tumor Lipids: Biochemistry and Metabolism by Randall Wood. AOCS hosts the first World Conference on Oilseed and Vegetable Oils Processing Technologies in Amsterdam in 1976.
1980-1989 • The Canadian Section of AOCS is its first international group to organize in 1985.
1979-1988: Coping with Diversity (.pdf)
1990-1999 • In 1990, INFORM is launched and JAOCS becomes strictly a peer-reviewed journal. In the same year, the concept of topical divisions within AOCS is first identified. Eight of the current 12 divisions are organized the following year. By 1995, AOCS membership surpasses 5,000 members. In 1998, the AOCS Soap and Detergents Division launches the Journal of Surfactants and Detergents (JSD).
1989-1998: The Good Times (.pdf)
1999-2008: AOCS’ tale of two cities (.pdf)
2009 • The AOCS celebrates its 100th anniversary in 2009.
2009-: Centennial! (.pdf)
2000-2010 • Online versions of two AOCS press journals, JAOCS and Lipids, debut in 2001 while INFORM becomes available online to all AOCS members in 2002. Internet expansion continues when the AOCS begins posting podcasts with authors on its website in 2006.
2011 – 2020
- 7th edition of Official Methods and Recommended Practices of the AOCS is published
- Launch of the first conference dedicated to the sustainable proteins which later becomes known as the Sustainable Protein Forum
- Global pandemic leads to first fully online annual meeting, expansion of webinar programming
2021 – Present
- The AOCS offers its first online continuing education course in 2021
- Annual meeting returns as a face-to-face event after the pandemic in 2022
- Launch of the Sustainable Food Proteins journal takes advantage of the rapidly expanding alternative protein market
- 8th edition of the AOCS Official Methods debuts as a new digital product
