Plant proteins stick together as environmentally friendly wood adhesives
For decades, there has been commercial interest in replacing urea-formaldehyde adhesive in building materials. In the US, studies on protein-protein interactions have led to a better understanding of these properties for improving soy-based adhesives. And in Europe, co-products from sunflower oil production are being tested in interior construction applications. Read about how these teams are enhancing biobased construction materials.
Fibrous plant-based meats using controlled phase separation
To appeal to consumers, meat analogs the same chewy, juicy, fibrous structure and texture as the real thing. Scientists describe proteins plant as globs instead of long, aligned fibers, as observed in animal muscle. By applying the knowledge gained in material science studies regarding phase separation, food scientists can form protein-polysaccharide fibers that replicate muscle.
AI is transforming allergenic protein prediction
An open artificial intelligence platform, known as a protein language model, turns amino acids into words and sentences with pattern recognition that predicts allergens better than previous models that relied on protein composition. Read about its capabilities in this article.
The choroid plexus unlocks the brain’s lipid secrets
This article explains the lipidomics method a research team developed to study an area of the brain known as the choroid plexus. They found that it is responsible for docosahexaenoic acid and arachidonic acid modulation and the production of proinflammatory modulators.
