The 2020 AOCS Annual Meeting & Expo was held online from June 29 to July 3, 2020. The meeting featured 200+ oral presentations, 60+ poster presentations and 60+ exhibitors. The 2020 Annual Meeting — the first AOCS Annual Meeting ever held online — provided 2,900+ attendees with access to the latest scientific and technological developments in fats, oils, proteins, surfactants and related materials from the comfort of your home or office, despite the challenging circumstances created by COVID-19.

An Overview of Oil Contaminants

Alan Paine, BSc Retired, Desmet Ballestra, reviews the various types of contaminants in edible oil, how they come to be there and how they can be removed or avoided. The presentation looks at contaminants arising from outside the oil such as poly-chlorinated bi-phenyls, poly-aromatic hydrocarbons, dioxins, pesticides and mineral oil. Contaminants arising from within the oil will also be considered, including trans isomers, 3-monochloropropandiol esters (3-MCPD) and glycidyl esters (GE).

Bioprocess Development for Novel Functional Lipid Production: Screening and Analysis of Microbial Metabolisms and Enzymes

Dr. Jun Ogawa, Professor at Kyoto University, presents results that suggest the dietary fatty acid metabolites produced by gut microbiota can influence the health of the host and might have potential as novel functional foods and pharmaceuticals.

CBD/Hemp Processing: Challenges and Opportunities for Innovation

Starting with a broad survey of the hemp processing industry, Rob Reintjes, Artisan Industries Inc., and Emmett McGregor and John Herring, SciPhy Systems, cover the primary methodologies of extracting and purifying a complex mix of cannabinoids and a multitude of other bio-active compounds from hemp and discuss some of the inherent challenges associated with each process.

Crystal Memory Near Discontinuous Triacylglycerol Phase Transitions: Models, Metastable Regimes and Critical Points
Computing the Fractal Dimensions of Aggregates

In the first presentation, Dr. David Pink, Senior Research Professor, at St. Francis Xavier University, outlines a mathematical model, with a single phase transition, that shows how the observations of "crystal memory" can be explained, makes predictions and relates them to recent experimental data.
The second presentation provides an overview of the mathematics of light microscopy and box counting, neutron scattering, and X-ray scattering and shows how erroneous conclusions can arise from their use.

Effects of Tripalmitin and Tristearin on Crystallization and Melting Behaviour of Coconut Oil

Dr. Hironori Hondoh, Associate Professor at the University of Shizuoka, discusses the investigation of the effects of triacylglycerol additive (0.3–10 wt.%) and cooling rates (2°C, 5°C, and 10°C min−1) on the crystallization and melting behavior of coconut oil.

FA Distribution in Infant Formula Lipids Analyzed by Joint JOCS/AOCS Official Method Ch 3a-19

Dr. Yomi Watanabe, Head of the Food Technology Laboratory at the Osaka Research Institute of Industrial Science and Technology, discusses the Joint JOCS/AOCS Official Method Ch 3a-19, a newly launched method to analyze positional fatty acid (FA) distribution in fats and oils. By combining the Röse-Gottlieb method and Official Method Ch 3a-19, the FA distribution in fats contained in the infant formula was successfully analyzed.

Hard Surface Cleaner Development with HLD-NAC Principles

Eric Theiner, Applied Technology Manager,Evonik Corporation, discusses how the concepts behind Hydrophilic-Lipophilic Difference and Net Average Curvature(HLD-NAC) can be combined with substrate wetting and surfactant monomer diffusion to the cleaning solution/soil interface to provide an efficient and effective hard surface cleaner.

How Should Industry and Academia Align Frying Oil Research

Richard DellaPorta, Senior Principal Scientist, Pepsico / Frito-Lay, reviews the methodologies academic researchers use to understand the behavior of frying oils and how these methods can be applied to the needs of different industries.
