Areas of interest include:

  • The relationship of dietary fats to promotion of wellness and prevention of disease
  • Omega-3 and omega-6 essential fatty acids and eicosanoids, fat-soluble vitamins, and other fat-soluble constituents
  • Fat substitutes and advancement of nutrition policy
