  Helbling coordinates and administers the work done by AOCS for international standards development as well as Official Methods development and maintenance. She has a B.S. degree from UIUC in Food Science and Human Nutrition and a M.S. degree from Johns Hopkins University in Biotechnology.

AOCS is the US Administrator of several ISO Technical Advisory Groups (TAG)s to ANSI. Helbling administers ISO/TC 34 (Food Products), ISO/TC 34/SC 2 (Oilseeds), ISO/TC 34/SC 11 (Fats and Oils), ISO/TC 34/SC 17 (Food Products and Management Systems for Food Safety), and ISO/TC 34/WG 16 (Animal Welfare). She also provides secretariat support for ISO/TC 34/SC 16 (Horizontal Methods for Molecular Biomarker Analysis).

Prior to joining AOCS, Helbling conducted laboratory research in diet modified epigenetic signatures affecting metabolism and development.
