Accelerated Oxidation Test for the Determination of the Oxidation Stability of Foods, Oils and Fats Using the Oxitest Oxidation Test Reactor

DEFINITION
The OXITEST Oxidation Test Reactor subjects the whole sample, without prior preparation, to a high-oxidative-stress environment (high temperature and oxygen overpressure) in order to evaluate, in a short period of time, the resistance to fat oxidation. This instrument monitors the oxygen uptake of the reactive components present in food-feed samples to evaluate the oxidative stability under accelerated oxidation con-ditions. The OXITEST reactor temperature can be regulated from room temperature to 110 °C, while the oxygen pressure can reach up to 8 bar.

SCOPE
This method is applicable in general to all foods, oils and fats covering a wide range of test sample types with at least 2–4% fat. It can be used to investigate the oxidation stability of samples (solid, doughy or liquid), in order to determine their quality or their state of preservation directly on the whole sample, without preliminary fat separation.
