Member Spotlight: Meet Marc Pignitter

Member Spotlight is a regular INFORM magazine column that features members who play critical roles in AOCS.

Marc Pignitter is currently an associate professor at the University of Vienna’s Institute of Physiological Chemistry in Vienna, Austria. His research interest focus on innovative approaches to better understanding and controlling lipid oxidation in foods and its effect on human health.

Can you tell us about your research?

My laboratory focuses on identifying pathways and markers of lipid oxidation in foods, changing food processing methods to improve oxidative stability of foods, and evaluating the biological effects of dietary oxidized lipids. We apply modern tools of analytical food chemistry (LC-MS, GC-MS, NMR and ESR), foodomics, oxidomics, and cell culture techniques to unravel oxidative rancidity in foods and its metabolic effects.

What is the biggest challenge you are trying to conquer in your research?

We are trying to obtain a holistic view of the compounds and reactions taking place in foods and biological systems exposed to oxidized lipids. There are far more biochemicals with an impact on lipid oxidation in food than we are currently tracking.

How has AOCS helped solve the challenges you encounter in your research?

AOCS has helped me solve challenges in my research in many ways. Access to the latest research presented at AOCS Annual Meetings, webinars, and in AOCS journals lays the foundation for my research endeavors. Most importantly, the scientific exchange within this community leads to new ideas and projects to address urgent research questions. And last but not least, receiving the Health and Nutrition Division New Investigator Research Award for my research activities gave me encouragement and motivation. Thank you, AOCS community.

What made you start a mentorship program for LOQ/AOCS?

As AOCS has helped me in so many ways, I was thinking about what I could do to return the benefit to the community. Soon it was clear that organizing a mentorship program might be how LOQ members could help each other, independent of their career stage. The kick-off meeting took place during the Annual Meeting 2022 in Atlanta and was a success. I am very excited to see how it develops and I hope that many AOCS members make use of this opportunity and register for the second round of the mentorship program. All Divisions are welcome to participate, I think an AOCS mentorship program across the disciplines might be an appreciated experience not only for LOQ but also for many AOCS members.

From where do you get the energy after a hard week at work?

I am trying to spend as much time as possible with my kids in the nature. In Austria, I am lucky to be surrounded by mountains. Astonishing views and the spirit of nature helps me to slow down and recharge my batteries.

What are you looking forward to in the coming months or years?

Together with a team, I am about to found a start-up focusing on next-generation edible oils which are rich in omega-3 fatty acids, have a long shelf life and pleasant taste. The new way of producing vegetable oils without any additives provides healthy, stable, and tasty oils.
