2-/3-MCPD Fatty Acid Esters and Glycidyl Fatty Acid Esters in Edible Oils and Fats by Enzymatic Hydrolysis

DEFINITION
This method is used for the determination of fatty acid esters of 3-chloro-1, 2-propanediol (3-MCPDEs), 2-chloro-1, 3-propanediol (2-MCPDEs), and glycidol (GEs) in fats and oils. The ester analytes are hydrolyzed to their respective free form analytes by a lipase. The free form glycidol is brominated to 3-bromo- 1,2-propanediol (3-MBPD). Subsequently, the free form analytes are derivatized with phenylboronic acid and subjected to GC-MS analysis. The results are expressed in milligrams of the respective free form analytes per kilogram of test sample. This JOCS/AOCS Joint Method was adopted from the Japan Oil Chemists’ Society JOCS Standard Methods for the Analysis of Fats, Oils and Related Materials (JOCS eds.) and is adapted from JOCS Standard Method 2.4.14-2016 (Reference 1).
